Roast loin of monkfish coated in garden herb dust & served with crushed Jersey Royal potatoes with grilled chorizo & ratatouille puree

Black pepper crusted tuna loin served with sweet rougail, shredded white scallion & teriyaki balsamic sauce

Steamed fillet of wild sea bass served on a bed of red pesto couscous, fennel piccadillos in basil, olive oil & black olive coulis
